Sugarcane is a tropical grass native to Asia. It grows exceptionally well in the rich soils of Florida's Everglades agricultural area. Ample rainfall and tropical temperatures during summer months create ideal growing conditions, and the moderate winters are perfect for harvesting. A Rainbow of Health, our organic cane juice is milled right on the farm, the same day as the harvest. The unique, single-crystallallization process preserves the original flavor of sun-sweetened sugarcane without the use of additives, preservatives, or animal by-products. Sugarcane planting in Florida takes place from September through January. Cane seeds, produced in white or reddish plumes at the tops of mature cane stalks, are too small to be planted directly in the field. Instead, stalks are harvested from mature fields and cut into short 20-inch segments, then laid in furrows and covered with soil. Sprouts from the cane stalks emerge two to three weeks later. The cane stalks grow in dense rows of sugarcane that are ready for harvest in 10-12 months. From October through March marks the harvest period for sugar cane. The natural juice is pressed from the freshly harvested sugarcane by a series of high-pressure rollers. Water is added to improve the extraction and the remaining fiber is used as a clean source of renewable energy. Sweet as Nature IntendedRaw organic cane juice is clarified by neutralization and heating and is decanted from the residual field material and fine fiber particles. The residual solids are recovered and returned to the cane fields. Fine filtration removes any remaining solids and naturally sterilizes the clarified juice. The clarified juice is then heated with steam to evaporate the natural water, concentrating it into a sweet, golden syrup. Typically, sugar cane is grown for three years, and then the fields are planted with rice. Rotating sugarcane with rice restores the soils fertility and provides a rich habitat for many species of wading birds.
